Sheer khurma, which translates to “sweet milk,” is a rich and creamy dessert served during Eid-ul-Fitr celebrations. The dish is made with a blend of seviyah, milk, dates, and dry fruits. Traditionally, families serve it as breakfast on Eid morning. Later, they also offer it to guests who visit throughout the day.

Meanwhile, a few families in the older parts of Hyderabad continue the tradition of crafting handmade seviyah. Many of them belong to areas such as Chaderghat. These artisans have been preparing the delicate vermicelli strands for generations. Their work keeps a long-standing culinary tradition alive in the city.

One of the artisans is Saleem Khan, who has been making handmade seviyah for many years. Speaking to media, Khan said he has been in the profession for the past 40 years. He also explained the current prices. According to him, handmade seviyah costs Rs 300–350 per kg in wholesale markets. However, in retail, it sells for Rs 400–500 per kg.

However, handmade seviyah is far more expensive than the machine-made variety. Reports say it can be three to five times costlier. Even so, customers continue to prefer it. Many believe the handmade version improves the taste and texture of sheer khurma.

Unlike machinemade seviyah, which often turns mushy when mixed with milk, the handmade variety keeps its texture. Therefore, it enhances the dish’s overall taste and quality. Because of this difference, buyers often choose the traditional product despite the higher price.

The process of making handmade seviyah also requires skill and patience. Artisans start preparing it months before Eid. They spend long hours creating the fine strands of vermicelli by hand. However, the bulk of sales usually takes place during Ramzan, when families begin shopping for Eid celebrations.
